35 km from Livorno
Livorno is the great port: the ferries to the islands, the Terrazza Mascagni, the cacciucco of the sea. But for the other Tuscany — the cooking of the land, of game and woodland — head about half an hour south, into the hills above Cecina. Osteria del Cinghiale is in Riparbella, at Località Il Giardino 44, 35 km from Livorno. Here the tradition is intact: pappardelle with wild boar, peposo, Florentine steak over the embers, fresh pasta and vegetarian dishes. Free parking, a quiet garden, an honest welcome. Well worth the short drive from the coast.
From the menu
Fresh egg pasta dressed with a slow-cooked wild boar ragù, red wine and woodland spices. The osteria's signature dish — the one worth the drive.
Wild boar marinated and braised slowly with black olives, tomato and aromatic herbs. The recipe of Tuscan tradition, made the way it was in the old Maremma farms.
Steak grilled over embers, only selected cuts. The queen of Tuscan cooking, for those who prefer the grill to game. And for everyone else: burrata ravioli, peposo, vegetarian dishes.
